Today I want to share with you my quick and easy go to breakfast. My eggs and quinoa breakfast. This is an egg white only meal and fits into the Live Fit approved foods. If you don’t know already, I use the Live Fit Trainer to keep my health and fitness in tip top shape. I’ve been following this guide for so long that it’s more just the way I live and eat now. But I started on this trainer because its free, and I’m cheap. The Live Fit Program saved me a ton of time because it gave me a realistic starting point with exercise routines and recipes, so I didn’t have to take a whole lot of time researching things on my own. Last week I shared my go to snack on the go, pumpkin protein bars. Today I’m sharing how I meal prep for my breakfasts 4 days at a time in just 15 minutes… with two ingredients. It’s so super easy.
Breakfast Meal Prep: Eggs and Quinoa
My favorite part of meal prepping is the time it saves on a daily basis. The Live Fit program emphasizes eating a breakfast rich in protein and complex carbs within an hour of waking, but I really don’t feel like cooking and cleaning within an hour of waking up. I need my coffee and I need to chillax for a minute. knowwhatimean? So prepping my breakfasts with the rest of my meal prep is a HUGE lifesaver for me. Otherwise I’d just have coffee for breakfast, because ain’t nobody have time for that.
Anyway. Here’s my go-to breakfast. It’s a scrambled egg white and quinoa/brown rice dish. It makes enough eggs for 4 days (for a woman’s portion they recommend 5 egg whites each morning). And the quinoa mix has enough servings to supplement your lunch or dinner meals too. I love that the quinoa mix adds flavor to the eggs for a savory taste. Or if you don’t want the quinoa, try tossing your eggs on top of two corn tortillas, add a little guacamole & hot sauce for a quick breakfast taco!
Breakfast Meal Prep
Scrambled Egg Whites and Quinoa Mix
Spray nonstick spray on a large pan. Heat pan on high, and turn heat down to medium/medium high heat once pan is hot. Pour entire carton of egg whites. Let the eggs cook until they are solid enough to toss. Continue to cook eggs just like scrambled eggs…because that’s what they are…
At the same time, grab a small pot and cook quinoa mix according to the package instructions.
I store my eggs and quinoa seperately. The cooked eggs makes 4 women’s portion size. Portion size for quinoa is 1/4 cup. In the mornings, I portion the eggs and quinoa into a microwavable bowl, cook for 1-2 minutes and enjoy!
